I don't see anything wrong with "You've seen how I've grown" -- over all the years up to now, he(?) has seen how she has grown.
Or alternatively, as WittGenStein suggests in #1, he has [at an unspecified time, but perhaps recently] recognised how she has grown.
To me, it's "took" that doesn't follow on well -- or wouldn't in BE. (By the way, the text goes on: "you took all my doubts, 'cause you were home" .) But possibly one shouldn't be too pedantic with a song lyric.
I would take "how I've grown" to mean "how I have matured", "how I've changed as I've grown older", or, as some people say, "how I've grown as a person".
