Ich halte daran nichts für ungewöhnlich. Das present perfect simple beschreibt Handlungen, die in der Vergangenheit begonnen haben und noch bis in die Gegenwart andauern bzw. kurz vor der Gegenwart angedauert haben. Die Verwendung des simple past deutet hier darauf hin, dass eine Handlung bereits (vorher, bevor der Reifeprozess begann) abgeschlossen war.

You've seen how I've grown, you took all my doubts.

so etwa: Du hast mitverfolgt, wie ich reifer geworden bin, nachdem du mir zuvor meine Zweifel genommen hast.

I don't see anything wrong with "You've seen how I've grown" -- over all the years up to now, he(?) has seen how she has grown.

Or alternatively, as WittGenStein suggests in #1, he has [at an unspecified time, but perhaps recently] recognised how she has grown.

To me, it's "took" that doesn't follow on well -- or wouldn't in BE. (By the way, the text goes on: "you took all my doubts, 'cause you were home" .) But possibly one shouldn't be too pedantic with a song lyric.

I would take "how I've grown" to mean "how I have matured", "how I've changed as I've grown older", or, as some people say, "how I've grown as a person".

Gut, wenn man es liest als 'I've grown since you took my doubt away', dann funktioniert es. Darauf wäre ich erst mal nicht gekommen, aber dafür gibt's ja LEO.

Welche Bedeutung hat You've seen how I've grown verglichen mit"You've seen me grow?

Da würde ich keinerlei Bedeutungsunterschied sehen, nur eine alternative Satzbaukonstruktion.
