I would use "in" for something that could be considered a "field" or "subject area", such as computer science. I would use "on" for something more specific, e.g. "I am an expert on beetles".

Letzeres ist m.E. korrekt: I'm an expert in (a field)

Allerdings schlägt Cambdridge dictionary die Präposition "at" vor.

Laut PONS gibt es drei Möglichkeiten bei expert:
to be an expert ON/IN sth. = Experte/Expertin für etwas sein, fachkundig in etwas sein

to be an expert at doing sth. = Experte/Expertin in etwas sein, sich in etwas gut auskennen.

Interessanterweise behauptete eine frühere Dozentin von mir (BE-Muttersprachlerin), es gäbe ausschließlich 'expert on'. Ich habe sogar noch alte Unterlagen daheim, die zeigen, dass ich wegen einer ihrer Meinung nach falschen Präposition (in) einen Fehler angestrichen bekam, der sich in der Endnote auswirkte...

I think you're an expert in a field and on a particular subject. As 'expertise' normally refers to a field rather than a particular subject, normally you'd expect 'in' with expertise.

I think 'at' is confined to gerunds, where it is normal (universal?).

I think another important distinction is this:

If you do something brilliantly yourself, you are an expert in (at?) it; if you know all about it, you are an expert on it.
