I'd say

Yes, "sophisticated" is good. Actually, you could also say:

A grand fragrance ...
A noble fragrance ...

There's nothing wrong with "noble" when used as an attributive adjective in front of "fragrance" or "scent"; the problem arises when you try to say "This perfume smells nobly" or even "This perfume smells noble." The latter structures don't work.
