I would like to express my thanks for the interview today which I found most interesting and informative.
Our conversation has absolutely confirmed my interest in the positions. It was a pleasure talking to you.

I look forward to hearing from you.

    Kind regards,
Braeuchte hilfe bei dieser email, da ich mir nicht sicher bin, ob man das ganze so inetwa sagen kann.

Not bad at all, but I'd make a couple of suggestions:

either "express my gratitude" or "thank you"

    one position or several positions?

    thx, Jeremy.
    just one position.
I am not sure about "express my gratitude". It sounds a bit old-fashioned.

I agree with you: "I would like to thank you for..." flows better in your email.

Just remember that if you use "to express my...", then gratitude is the conventional choice.
