"I'll be here all week" = ich (das Gewohnte, das Altbekannte) bin sowieso auch am Ende der Woche noch da. "Try a veal" = probiere es mit etwas Jüngerem/ Neuen/ nicht Verbrauchtem....Du kannst ja immer noch zurück kommen.

You are supposed to imagine a standup comic in, say, a restaurant in Las Vegas. "I'll be here all week" means "I'll be performing every evening this week". "Try the veal" or "remember to tip your waitress" are (supposedly) the sort of thing a performer would say in such a place. Basically, this is something one says after making a joke that didn't work so well, or was a bit corny or cliche.
