Wie übersetzt man denn am besten die "geklärte" Butter, flüssige Butter wäre m.E. auch ok.

Clarified butter, melted butter - ghee is a bit too ethnic, I think.

I find nothing under clarified butter - if I want to buy it...only btw.
clarified butter is fine for a recipe where people know how to make it...
for asparagus - most likely melted butter

Melted butter is melted butter. Clarified butter is the same as ghee, but is not the same as melted butter. It is made by melting the butter, simmering it, and then skimming off the scum that forms on top, then pouring off the liquid butter and leaving the solid dregs behind. The liquid should be more or less pure fat, and is used for cooking (it doesn't burn).

For asparagus, you'd want melted butter.
