weather sensitivity is fine. It's actually better than meteorosensitivity in my book.

In fact, 'sensitivity to (changes in the) weather' would be even better. (I don't think meteoro- whatever is really a word.)

'X sensitivity' could theoretically be sensitivity of X to something else. Like, um, microphone sensitivity, skin sensitivity ...

Weather Sensitivity
Many animals and plants can sense changes in weather well in advance. Birds feel the drop in barometric pressure before the arrival of ‘bad’ weather and increase their foraging. Cats become restless, not only because they see Tweety foraging on the ground. Perhaps we have inherited some leftover weather sensitivity from our primeval ancestors as well.

Of course, that's a headline, where compressed syntax is better.

And of course I didn't say 'weather sensitivity' was wrong, just that it might not be the best choice.

Pardon me for adding this, but you said (in #2) that, "in fact," your suggestion "would be even better." Maybe that is your opinion, but without context, how can you so be sure that your suggestion would, "in fact," be better?

I think the clearest explanation is to say that some people are more sensitive to changes in the weather than others. Abstract nouns in German often work better as clauses, especially for general audiences, laypeople, which was the context given.

'Weather sensitivity' is also okay as a shorter version, either in a headline before a fuller initial explanation, or in running text after the explanation.
