The original text is about the construction of the seating elements for a stadium - and I have not the faintest idea what an "off-shutter finish" might be. Could someone please help? Thanks!

It should relate to a surface treatment but I am afraid I do not understand either what exactly is to be done. Maybe you understand a bit more when leafing through the google hits.

It is probably about concrete surfaces:

... and as far I understand it, it simply is cast concrete "off the shutter", wherein "shutter" means "Schalung" in German:

    Dictionary: shutter

This means that the "Schalungsbretter" (as you say in German) have to have a smooth surface thus rendering the cast concrete surface as smooth as the (wooden) boards.

This must be it, thank you!
I just never thought "Schalung" for "shutter" - shouldn't that be "formwork" or "mould" ...? At least that's what I learnt from my co-workers :) So it is probably just the surface finish of precast concrete segments, with or without "woodprint"

    Thank you both!

@nana - you're right, but you might like to have a look at the LEO link above.

This is why I like LEO forums so much. You search and learn, constantly, even while solving other people's problems...
